Although the church itself does not have an official stance on video games or the depiction of Catholics or Catholic symbols in video games, there are still games that show prominent Catholic themes, culture, and figures.

Very often, Catholic representation in video games falls into the virtual representation category. Actual Catholic people are not represented, but Catholic buildings, architecture, symbols, practices, etc. all are.
This is primarily because of the effect Catholicism has, not just in the religious world, but throughout history as well. Any game that depicts Rome (for example Assassin's Creed II and Assassin's Creed Brotherhood) has to include Catholic symbols in order to accurately depict the real-life place.
There are also examples of games drawing from Catholic symbols and practices to inspire their in-game storylines and conflicts. The Castlevania series is a prime example of this, often depicting churches, crosses, and even Jesus's crucifixion in their games.
There is also the argument to be made that Catholic ideologies are also often depicted in video games, though this is a much more broad argument. Most games have some semblance of morality to them, and that sense of morality often mimics Catholic ideals (thou shall not steal, thou shall not lie, thou shall not kill, etc.).
Overall, though the church itself does not have any teaching or warnings against using Catholic imagery or the Catholic faith in a video game, it is important to still be respectful and conscience of the symbols being used, a standard which should be applied to any culture or people being depicted in a video game.
